Healthy Chocolate Waffles with Sugar-free Raspberry compote

These healthy chocolate waffles are absolutely delicious! Not all healthy waffles are born equally and I have tried my fair share. If you follow me on instagram you will know I love nothing more than a sinfully good breakfast item that is actually very healthy. A big ask indeed, and on my quest for such a guilt-free indulgence there have been some real disappointments. However it gives me great pleasure to announce that this super healthy chocolate waffle recipe is anything but disappointing! It is full of nutritional goodness and it tastes AMAZING. The waffle mixture is made from super clean high protein ingredients without any added sugar, including egg, almond flour, oats and banana. Despite the batter being made from healthy breakfast ingredients, the result feels luxurious and special. The waffle is moist and fluffy inside with a crispy exterior and can be topped with a teaspoon of dark chocolate chips to really bring out the chocolate flavour in the batter. I sometimes use sugar free dark chocolate chips but normally I opt for really good quality dark chocolate chips by the chocolate manufacturer Callebaut. At culinary school I was introduced to Callebaut chocolate and although it isn’t in my opinion quite as amazing as the Valrohna line, the fact that Callebaut is so much better value makes it the clear choice for home and professional use alike.

I love eating these healthy waffles with my quick and easy no sugar raspberry compote. There are only two ingredients; raspberries (fresh or frozen) and cinnamon.

My easy healthy waffle recipe is ready in minutes leaving you lots of time to savour every bite in leisurely breakfast bliss!

*If you don’t want chocolate waffles simply leave out the cocoa powder. And if you don’t want waffles at all…well usually I would say I have no more time for you.

On this occasion however I will let you into latest and greatest discovery, that this very healthy chocolate waffle mix also makes perfect healthy chocolate pancakes! If you don’t have a waffle maker and don’t plan on investing in one (my trusty waffle maker is by VonShef)…then DO NOT FRET.

Simply cook the batter as you would an ordinary pancake in a non stick frying pan. It’s the real deal.

Healthy chocolate waffles

Serves 2
Ingredients:

Waffles:

1) 1 large banana

2) 1 sachet of oats so simple instant oats (27g of instant oats)

3) 1 medium egg

4) 1 teaspoon baking powder

5) 2 tablespoons of milk

6) 1 tablespoon unsweetened cocoa powder

7) 1 teaspoon vanilla paste

8) 2 tablespoons ground almonds

9) 2 teaspoons of dark chocolate chips

Sugar-free raspberry compote:

1) 2 handfuls of frozen or fresh raspberries

2) water to cover the base of the pan

3) 1/4 teaspoon of ground cinnamon

Method:

Place instant oats in a blender (mine is a nutribullet) and blend for 10 seconds until a fine powder is obtained.

Add all the other ingredients and blend for 30 seconds until homogeneous.

Heat your waffle machine (mine is Vonshef) and spray with low calorie oil spray or grease with butter or an oil of your choice.

While the iron is heating and the waffle mixture is resting place the raspberries in a small saucepan and add enough water just to cover the base of the pan. Add the cinnamon and bring to a gentle boil.

Pour the mix into the centre of the machine when it indicates it is hot enough. Close the lid and cook for 2-3 minutes until the steam coming out of the machine has stopped.

When the raspberries have broken down and the liquid has reduced completely take the compote off the heat.

Remove the waffles with a wooden spatula and top immediately with dark chocolate chips.

Add the compote on top and enjoy!
