This recipe for an icey eggnog cocktail is wizzed up in a blender in less than five minutes and requires zero cooking at all - and boy is it good. This magical modern cocktail version of the classic Christmas drink is absolute perfection and I truly challenge you to find someone who doesn’t say…..oh wow! Upon first sip. I almost didn’t publish the recipe, dear reader, as part of me wanted to keep this little gem as a secret signature dish. It really is one of the best Christmas cooking hacks I have ever known. But…in the spirit of Christmas, goodwill and generosity, I am sharing my little Christmas miracle of a cocktail with one and all.

This iced eggnog really is the perfect easy Christmas cocktail to whip up at a moments notice with the blender doing all the work for you. You can keep a pitcher of this magical substance in your fridge for up to 5 days and after a lazy 10 second whisk it can be poured over ice into your fanciest cocktail glass and enjoyed immediately. Or if you feel really fancy, shake it in a cocktail shaker filled with ice to get that lovely foamy top and pour into a chilled glass. I promise you this will be your signature Christmas cocktail for evermore and everyone will think you very clever.

Even my mum who notoriously despises eggnog found this version utterly delicious. It reminds me of baileys, but as it is homemade, all the ingredients and aromatics really sing. (Hark the aromatics sing! Sorry couldn’t resist) Anyone you give this to will be talking about it for ages, it is that good. And as for you and your lazy little secret! Well…it’s up to you who you let in the club! ;)

Sip on this sensation whilst watching your favourite Christmas film or wrapping gifts. Or be super cheeky and pop some in an insulated water bottle to take on your next walk with friends. When and where you chose to drink this doesn’t matter, just promise me that you will.

Notes:

Alcohol: Use as much or as little alcohol as you like, and whatever incarnation of the spirits listed you chose. It doesn’t have to be an expensive whisky. Go with what you have on hand.

Dairy: Not really a Dairy Queen? No qualms. Use plant based milk and cream.

Vegan: although I haven’t tried it, I’d bet my bottom dollar that if you subbed the eggs for half a can of chickpea water and wizzed it up adding in the sugar gradually as a first step and then folded in the rest of the ingredients after, you would get a good result!

Halal: Now this is a challenge. I would say simply leave out the alcohol or for the most daring among you…sub the alcohol for strongly brewed tea infused with juniper, pine needles, thyme or orange peel. Still not convinced? Sub the alcohol for a shot of espresso.

Recipe

5 minute eggnog cocktail

Serves 4

ingredients:

4 fresh eggs

150g caster sugar 

1 teaspoon cinnamon 

1/2 teaspoon nutmeg 

1/4 teaspoon all spice 

Splash vanilla bean paste 

80 mls bourbon (any whisky) 

80 mls cognac 

350 mls any milk 

250 mls double cream (whipping cream or even soya cream) 


Method:

1) place eggs in blender and whizz for a minute until paler and aerated

2) add all the other ingredients except the alcohol. Blend for another minute.

3) pour in the alcohol and stir in with a whisk or fork

4) shake in a cocktail shaker filled with ice or simply pour over ice.
